Great barbecue chicken is a heat-management exercise. Cook the drumsticks gently on the cool side first, then move them over direct heat and glaze at the end. The sauce turns lacquered instead of scorched.

Ingredients

  • 12 chicken drumsticks, about 3 1/2 pounds
  • 1 tablespoon neutral oil
  • 2 teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne, optional
  • 1 cup barbecue sauce, divided
  • 1 tablespoon apple cider vinegar

Instructions

  1. Prepare a grill for two-zone medium heat, about 375 to 400°F, with one direct and one indirect side.
  2. Pat the drumsticks dry. Coat with oil, salt, paprika, garlic powder, pepper, and cayenne.
  3. Place over indirect heat, close the lid, and cook for 22 to 28 minutes, turning every 7 minutes.
  4. Stir 3/4 cup barbecue sauce with the vinegar. When the chicken reaches about 160°F, move it over direct heat.
  5. Brush lightly with sauce and grill for 6 to 8 minutes, turning and glazing often, until caramelized and 175 to 185°F.
  6. Rest for 5 minutes. Serve with the reserved clean sauce.

Cooking Tips

  • Keep a cool zone available so flare-ups never control the cook.
  • Use thin layers of sauce; thick coats burn before they set.
  • Do not use the same brush in the serving sauce after it touches undercooked chicken.
  • Dark meat stays juicy above the minimum safe temperature and becomes more tender.

Food Safety

Chicken is safe at 165°F, but drumsticks have better texture between 175 and 185°F. Check close to the bone without touching it. Use separate plates and tools for raw and finished chicken.

Storage and Reheating

Refrigerate for up to 4 days. Reheat on a covered grill over indirect medium-low heat or in a 350°F oven until hot, brushing with a little fresh sauce near the end.

Serving Suggestions

Serve with corn, vinegar slaw, potato salad, baked beans, or grilled zucchini. For a party, keep finished drumsticks warm in a low oven for up to 30 minutes.

Optional Substitutions
