Chicken thighs are forgiving, flavorful, and ideal for a hot oven. This method uses a simple spice rub and an elevated rack so the skin turns crisp while the dark meat stays succulent.

Ingredients

  • 8 bone-in, skin-on chicken thighs, about 3 pounds
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 lemon, cut into wedges

Instructions

  1. Heat the oven to 425°F. Set a wire rack inside a rimmed sheet pan.
  2. Pat the thighs very dry, including the underside. Trim only large overhangs of skin.
  3. Mix the salt, paprika, garlic powder, onion powder, thyme, and pepper. Rub the chicken with oil, then season all over.
  4. Arrange skin-side up on the rack with space between the thighs.
  5. Roast for 30 to 38 minutes, until the skin is crisp and the thickest thigh reaches 175°F without touching bone.
  6. Rest for 5 minutes and serve with lemon wedges.

Cooking Tips

  • A rack promotes airflow, but a parchment-lined pan also works.
  • Do not turn the thighs; uninterrupted top heat crisps the skin.
  • If the pieces vary greatly in size, begin checking the smaller ones early.
  • Broil for 1 to 2 minutes at the end only if the skin needs extra color.

Food Safety

Poultry is safe at 165°F, but thighs become more tender around 175°F as connective tissue softens. Measure in the thickest meat without touching the bone. Wash hands after handling raw chicken; do not rinse it in the sink.

Storage and Reheating

Cool and refrigerate within 2 hours. Store for up to 4 days. Reheat uncovered on a rack at 375°F for 12 to 15 minutes so the skin can crisp again. The microwave works, but softens the skin.

Serving Suggestions

Pair with roasted potatoes, lemony couscous, steamed rice, or a cabbage slaw. The leftovers are excellent chopped into grain bowls after removing the bones.

Optional Substitutions

Use boneless thighs and begin checking after 20 minutes. Swap smoked paprika for sweet paprika, or use oregano instead of thyme. Skinless thighs will not crisp but remain very juicy.
